The Backstory
“You could make a conventional bread recipe, or you could come through with something different. Roasted purple sweet potato yields a moist, flavorful loaf that works for both sweet and savory uses. You might just crush this one fresh out the breadmaker, though.” – Chef Lester Walker
What's Needed
Ingredients
1 3/4 C of wheat flour
1 3/4 C of spelled flour
10fl oz of warm water
5 oz of roasted purple sweet potatoes
1 tsp of fine salt
1/2 sachet of dry yeast (I used Fermipan)
Cooking Method
Cooking Instructions
First off, to roast the sweet potato, place it on a tray and place in a preheated oven at 200ºC for 30 minutes.
Let cool so that you can pick it up to the touch, but still warm enough so that you can peel the skin, and then mash it to make a puree.
Whisk together the sweet potato puree and the liquids then add to the bread maker.
After all the liquid is added to the dry ingredients, then add the yeast.
Press bake and enjoy.
